I'm looking to upgrade from my gtx 760 4gb setup, which has really surprised me with its viability with surround monitors. However, I have the chance to move up to 780s, and I dont know what to get. 780s normally come with 3gb, and so, the Poseidon looks great and has the ability to liquid cool which is sweeeeet. However, I'm running 1080p surround monitors, and I want 2 780's in sli. Do i need the 6gb versions, or can i go for the upgraded clock speeds? I'm not making a hard push for 4k, but full hd surround I already run, so that's a must. I also want this setup to be somewhat future proofed.

tl;dr for 2x SLI with 1080p surround monitors, Asus Poseidon or EVGA 6gb?

a thorough write up can be found here if interested http://wp.me/p4WK3a-2l

You dont say what Motherboard and CPU or PSU you are using.

So; as your starting point is a GTX 760 4Gb, I would say get another 760 and SLi it.
You will save yourself any issues until the prices come down.

Then save up for the best of whats to come in the gaming world. With games at $60 to $100 Euro/USD a pop, you might want to consider that.

Seriously though; if you have money burning a hole in your pocket $650 big; then I would go for one Asus Strix GTX 980. 4Gb
It will do all that the 1080p Monitors will ever need for quite a while; and use the 760 for PhysX.

There is a Titan Z at 12Gb you might need to save $3,000 for as an alternative.

Two GTX 780`s in SLi will be around $100 cheaper (if somewhat warmer in winter); and bigger savings if you look on Yahoo Auctions.

With the GTX 980 you can get another after Xmas; SLi and go flying for every game for the next four+ years.

Nothing you mention using right now seems to really NEEDS SLi 780`s or 970`s (no stereoscopic 3D etc).

QED
You might be better off getting a single 980 and using the 760 for dedicated PhysX until....SLi time again

But the Asus 4Gb Strix 970 does look tempting for SLi....

Titan Z with 12Gb memory at $3000 could be considered real comedy for the MSM.
