Today i had just purchased a EVGA GTX 780 6gb GPU online and am unsure if my PSU is powerful enough to use it. I got a Coolermaster Vanguard v850watt 80 plus gold PSU which i purchased a month ago. And will i need to good cpu cooler as i am using the stock intel at the moment. I got an i7 with 8gb of RAM.

I will be using it to play Skyrim with LOTS of mods

The PSU is plenty, with room to spare.
I`m not sure if it would also be enough for SLI, or it would be too close.

Depends on the quality of the PSU.

If you're just running 1 780 6gb, a good 650w would still give plenty of headroom. If you're running an SLI in the future, a good 850 would provide plenty of power for the system.

Your PSU is listed as a Tier 1 PSU on the tom's hardware psu tier list. It's overkill for a 1 card set up as is.

If you're not overclocking, you wouldn't need it. But if temperatures become a bit uncomfortable for you, then go ahead and get one.

If you are overclocking, definitely suggest getting one before overclocking.

I think the evga superclocked 6gb comes overclocked for you in the factory, but 850W is more than enough to power it even in sli
