Buying tonight. Should I change anything?

Solution
I'd say get rid of the cooler and get a xeon instead, that will save you up to $200, use money saved on a 780ti , you placed too much emphasis on the cpu part, yes a i7 is good for your needs but a xeon is like a i7 but not overclockable and cheaper, you can get the rig maybe later this month when the 900 series will be released maybe to give you extra performance for money

No, I'm still indecisive about everything.
