Unless you are running a pair of 280X they will never make use of 6GB of VRAM, the 3GB model isn't memory limited unless you really really try with skyrim and mods.

I'd go for the i5 build, the i7 would give more CPU power, but you don't have any apps listed that will really make use of it, the 6GB VRAM on the AMD build doesn't get you any gains, so basically neither of the other two builds offer an advantage over the i5 build, and the i5 build has a lead over the AMD build.

6gb ram on a 280x is completely useless. I would go for the i5 build, it will offer best overall gaming performance. Some people will say the 8350 is better for recording as it has 8 cores, but its much slower for many games than the i5 is in the first place. for something like bf4 which uses many cores + recording the 8350 may be better than the i5. But i think without cherry picking the i5 would still be better overall for gaming + recording. I believe both amd and nvidia cards have technologies now to take the load off the cpu while recording.

Truthfully the 8350 VS the i5 is very debatible but the * cores would prove better in recording and streaming. the i5 will give 2-5 FPS inprovement ingame though. But over all i would go with the i7 mainly because if you do overclock the GPU it preforms better than a overclocked 280x. if you go with the i7 your future proofing a little bit. DON'T go AMD in this case because AM3+ socket CPUs are no longer being made (new Generation) and the FM2+ etc... will take over with APUs. So i say go with the i7 build better overall.
