General questions about buying windows 8.1

I went to look for windows 8.1 OS's and i found out there is pro, normal, student pro, and a few letters (OES). I'm not fully sure which one to choose. I looked at pro a little bit, and it looks like it has better data encryption (protection), but i'm not fully sure. I am also a student, but i don't know for how much longer.

The questions:
Does data encryption on pro mean it is good for protecting my data or just simply something that regards to servers?
If I graduate will I have to pay the difference?
Is there anything different with the student version in terms of quality?
Does OES mean that i get no updates on the OS

Unless in a corporate environment, you do not need 8/8.1 Pro.
If you qualify as student, get that.

No difference between student and regular
'Data encryption' means BitLocker is a feature of the OS
For any of them you will get whatever updates are applicable.
