Titan is more oriented to rendering, etc. So, Titan would be my answer.

Ok The titan will obviously still play all games at max quality correct?

Yes, it will play games at decent frame rates. It's a bit better than the GTX 780 so you can expect high performance from it. Depends on what resolution you will be gaming at though. At 1080p, it's awesome and at 1440p, it's still pretty good.

It depends what program you will be rendering the videos though.

You should also consider AMD cards too unless you prefer only Nvidia cards for whatever reason.
For Sony Vegas, it seems like AMD cards are much faster but again, it depends on the program and I guess you gotta give a hand to AMD for making their cards excellent in compute performance.

Honestly the titan is not better than the 780ti, benchmarks say hat the 780ti gets sometimes at least 20fps more tan a titan, it's a worksation gpu, not a gamer's gpu, if you wanted faster rendering speeds you need to be looking at more RAM, not a gpu, 780ti is better for gaming but for editing work etc, titan is better, but for uploading videos, just get more RAM? Cheaper

Ive honestly never seen any improvement in render time with adding more ram. But I have read that the GTX 780ti absolutely stomps the titans, even the Titan Z. But I Haven't heard anything about rendering speeds being significantly better.

More ram means faster render, cards don't help with that
