Help with building setup

So currently I'm in the planning stages of building a gaming PC. I have a budget of around £600-800. I'm totally willing to spend a little more if you think it's justifiable. I just want it to have an optical drive, easy to upgrade if I need to and play current and new games at a decent rate. The price doesn't include a monitor but the rig should be able to support 2 screens. I personally can't come up with one because whenever I do my research I keep hearing new information that confuses me. Mostly with the GPU and CPU. Do I go Intel or AMD for the CPU? AMD or Nvidia for the GPU? Help with this is greatly appreciated. Thanks in advance guys. :)

And if you had no OS in the build I would put the money in a GPU or CPU.
