is 16GB of RAM too excessive for my uses?

As i said in my last post, i'm looking to build a computer with these specifications:

However this time i have a question about the RAM, is it too much?
I plan on using it for mainly Music Production, (FL Studio) Virtualization (VirtualBox and VMware, Hyper-V might not be used, still deciding on that) Gaming (Don't go crazy here fanboys and fangirls, i'm most likely not gonna max anything out, plus it's the only card i could find that has VGA, and DVI-I, a VGA-Compatible version of DVI.)
and perhaps, maybe 5-10+ years down the road, i plan on converting it into a file storage server, with either Ubuntu Server or Windows Server 2015, or whatever the latest version would be, personally, i like Windows Server a LOT more than any other platform (FreeNAS, Ubuntu, Red HAt, etc)
Would it be enough, that's the question.

You had might as well go with 16. If you are going to be doing any sort of virtualization you will kick yourself for not getting the higher amount. It is getting to the point where you want to allocate at least 2 - 4 for most consumer operating systems for them to give you the best experience. I know most people say that 8 is the sweet spot at the moment (for gaming at least) but it never hurts to have a bit more. 16 is not a crazy amount and it seems like you would benefit from the extra amount based on what you say you will do with the machine and will also set you up to use it in the future if drivers are still supported.

Now i know, completely off topic, and will probably get hammered with fanboys opinions here, but would the AMD chip i chose be ideal, or an Intel?

In part depends on your budget - I suggest INtel most of the time, for what you'll be doing and if this is your budget then you're going the right direction I think, it'll be a good rig suited to your needs. I wouldn't plan on it keeping you happy for 5 or 5+ years, but good possibility a strong Intel rig wouldn't either ;)

AMD, the 8 cores would be better for virtualization, and could probably squeeze a little music production in there. I kinda wish AMD would just make a 12 Core CPU or even larger for AM3+, sorta like a Xeon (Although obviously not for AM3+ XD)

Intels hyperthreading works great with virtualization and would give you the "cores" that you need; however, you are going to spend more on an Intel solution. If you are somewhat limited by budget constraints then there is nothing wrong with the AMD.
