8gb vs 16gb ram

8GB (1x8gb) G.Skill DDR3-1600Mhz: $71

8GB (2x4gb) G.Skill DDR3-1600: $80

16gb (2x4gb) G.Skill DDR3-1600: $158

The most it will be used for is gaming, no video editing, although I may use Photoshop once in a while just to crop photos.

A 2x4GB kit would be ideal for your situation. It's faster than a single stick because two sticks can operate in dual channel mode, but it's still enough for the mentioned tasks, so 16GB would be overkill.

The main reason for getting 16GB is simply not having to worry about most likely never need to worry about RAM for the computer's foreseeable useful life.

(Unless you are a multi-tasking nut like me who uses 12-20GB RAM on a normal day.)
