I would add a 1TB hard drive, and that's it. What resolutions are you planning on running?

I already have a 3tb hdd with all my stuff and was going to move the os over to the ssd I'm planning on running at 4k or 1440p

Great. Keep in mind you'll have to re-enter the product key for windows as you'll be using a new CPU and motherboard. If you have an OEM version of Windows, you'll have to buy a new copy.

I might buy a win 7 copy because im not a big fan of win 8 so would that affect any of the data on my hdd besides the os

If you install 7 on the new SSD, it won't affect any data. Then just delete Windows 8.
