How big of a difference is 8GB to 16GB of RAM?

If you can go 16 now, I'd do it, especially on a new rig, DRAM requirements are going to continue to grow and while many make it sound easy to simply 'add' more DRAM, adding/mixing sets of DRAM can be and often is problematic. The forums are full of people that have tried and resulted in problems where the sets won't play - even same exact sets

For gaming, recording, and streaming, none. For rendering/editing, that's going to depend on the size of the files you're working with. I'd say anything over 4GB in size would probably benefit from having more than 8GB of RAM installed.
