I was wondering if I should get the ASUS PCE-AC56 or the ASUS PCE-AC68 I am looking for a wireless adapter that will cover a long range and work very fast

Solution
Adapters are only a part of the equation - the router, location, distance, interfering objects - all impact "best". "Best for you, in this one location" will still be one of those "you pay yer money, you take yer chances" propositions.

You might took a look at SmallNetBuilders and look at their tests, but "best for you" is still a highly subjective case.

Your solution probably has little do with the Adapter - the 'receiver unit' - but much more with the Router being used PLUS distance PLUS interference.

Go over to SmallNetBuilder and cruise thru their forums, and read for a few days. Your choices, here, are well-considered ones but those writers and testers may present a different set of factors for you to consider.
