Using the same product key after changing the amount of RAM.

I installed another 4GB DIMM on my laptop and it now has 8GB. I bought a Windows 8.1 upgrade key and activated when it had 4GB RAM. Is it possible to re-use the same key if I reinstall windows now?

No problem extra ram has no influence on the win license.

Yes. Only when you have to re-install Windows (changing the motherboard or OS Hard Drive) will you need to re-activate.
