Constant GPU crash on new computer

Hi guys, I've been looking through this website and you all seem very helpful so I thought I'd give it a shot. So I recently ordered a new PC from CyberPower, and I chose the components myself. I know enough about computers to get myself in trouble (obviously that's why I'm here) and when I built it online it didn't warn me of any compatibility issues. Here's the specs that I think are relevant:

Intel i7-4790K 4.0 GHz
16GB ADATA XPG V2 (1866MHz)
2TB LG SATA-III 7200RPM HDD
ASUS Z97-P ATX
PSU 800 Watts Standard 80 Plus Certified (Power Co LTD)
NVIDIA GTX 780 3GB (Zotac)

I also have an internal Wifi card. Now it runs stable for anything except for certain games. About half the games I play, when there's a lot going on screen at once, the screen will black out and flicker for a bit. Then it usually goes to the desktop with the game still running in the background. Most of the time I end up having to close the program. In the event viewer I just get this generic message:

Display driver nvlddmkm stopped responding and has successfully recovered.

I've tried things like turning off Aero and setting the system to performance, but nothing seems to help. I spent sometime on this site and decided to download CPUID HWMonitor. I see the GPU runs in the low to mid 70's range, sometimes topping out at 80, but from what I've read that's within the normal tolerances. One thing I did notice was the voltages, however. Now I don't know how accurate this software is at voltages, but here's how they read:

+3.3=2.736
+5=4.650
+12=11.904
-12 and -5=-11.094
+5VCCH=3.790

What are your thoughts? I've never heard of that PSU company before, but "certified" sounded good to me. Also two other issues of lesser importance: my 1866 RAM only shows as running at 1333 in the BIOS. The other thing is that I can never power off the system. It reboots itself after about 2-3 seconds of being off. I've tried turning off all the "wake computer" features of all the peripherals and I've also turned off the "reboot after system crash" option.

Seems like a psu issue to me...3v seems to be low..since its an unknown company i suspect the psu...can you try another smps...?try checking ram frequency with speccy..even on my pc it would show only 800 mhZ in bios whereas my ram 1600...

Do you have the latest BIOS? If not get that. Next get the DRAM running correctly, enable XMP and select profile 1. Next, I'd uninstall the drivers, get the latest versions and reinstall....then if problems continue, maybe see if you can borrow a different PSU, a good 600 watt or better

Ok I'll try this. Already activated the XMP profile, but the other things I'll have to google how to do. This is all above my pay grade.

After enabling XMP in BIOS Speccy shows 933MHz. Why is that half of 1866?

yes you will see only half since its double data rate...

Haha ok thanks for being gentle. Something I just noticed in the BIOS was the Hardware Monitor section. It had voltages listed as well, but they were different from the CPUID HWMonitor readings:

+12.312
+5.190
+3.432

I would assume these are probably more accurate? Also kinda nervous about updating BIOS from what I've read so far...
