I am using Lightroom 5 and Photoshop CS5, but the GTX750ti does not have a DisplayPort Outlet, that is why I am looking to use HDMI. Will this give me 2560 x 1440.

Alright! Your monitor runs at 60 - 75hz, so I would consider upgrading to an HDMI 2.0 cable if you haven't already. I read somewhere that HDMI 1.2 maxed at 30hz, although that may be strictly for 4K.
Yes, probably, I ran a 4k monitor off my GTX 660, which isn't terribly far off, no problem. If you attempt to use your 750 ti and experience any input lag on your monitor, consider switching to Display Port.
