Can you use a pci-e power cord splitter (the one with two 6+2 pins in the end and 8 pin to the psu) to power one graphics card, or should I get two single 6 to 8 pins instead?

If that splitter came with the PSU it should be fine. If you are still worried it doesn't hurt to be safe rather than sorry.

the 6+2 power leads are intended to be used to satisfy either 6 or 8 pin requirements of a graphics card. If your card has only the need for 6 pins, just leave the +2 dangling.
