Should I change my memory stick to a DDR3- 2000 or DDR3-1866??

You'll be perfectly fine, 1.6-1.65 is the norm for 2133 and up and many sets are certified by Intel at 1.65 -- for 16GB, might consider a 2x8GB set, less stress on the MC (memory controller) and ever so slightly faster
