Two would be better than one as it will utilize the dual-channel allowing for quicker memory access, but if necessary, you can run with just one 8GB RAM module.

You can use an 8GB module, but dual channel doubles the memory bandwidth so there is honestly no point in doing it over 2x4gb unless you already have the 8gb stick and cannot afford another 8gb stick
