using an old laptop HDD as a SSD and wondering if it will work for virtual RAM if I allocate some of the memory for that whilst it is USB 2.0 connected to my PC and how much to use for that as my PC only supports 4GB of RAM and only has 2GB installed

USB 2.0 is going to be REAL SLOW for a swap file. A laptop HD is going to be SLOW because of the 5400 RPM rotation. Your local disk will be a MUCH faster solution.

It is not possible to create a swap volume on a removable storage device, so the answer is no.
