I currently have:

EVGA 780 sc acx
i5 4670k @ 3.4ghz
8gb 1866mhz RAM
1tb HDD
120gb SSD
and a ...
RM750 Fully Modular PSU

I am thinking of going triple 1080p setup but i don't think my PC can handle that so i was looking into buying a second GPU for SLI. Will my PSU handle SLI? and Is the 3gb enough? If i need a new PSU, is it easy to replace, as it is fully modular?

It should, but you will be cutting it close, and the RM750s have been known to have some issues. Personally I'd upgrade your PSU to be sure to an 850 of some sort, just to give you some headroom and get a tier 1 or tier 2 PSU for safe side .

Will it be easy to replace the PSU? Do you have to unplug all of the components or can you unplug the wires from the psu and put the new one in with the old wires still attached to the PC hardware? Also any tips on antistatic? Thanks for the help :)

yes replacing the PSU is easy just remove the screws remove the connections and put the new one as the earlier one you dont have to worry about static unless you are touching the card or motherboard https://www.youtube.com/results?search_query=how+to+saf...
check out few youtube videos before doing it and you will be more sure.

One thing to be aware of is that you can't mix modular cables from one brand of PSU with another brand's cables.
