I purchased a 120gb ssd with the intention of moving my OS to it. I moved all my data to an external hard drive today and found that what was remaining was still in the region of 140gb. Any ideas why this is? I would like to get it below 100gb to switch to my ssd, but this seems impossible now.

No OS is going to take up 140GB. What remains would likely be programs that have been installed, or a stash of media files you might have missed. A SSD that size shouldn't be your main source of storage anyway. Optimally, you'd load an OS on it, with your more important/heavy load time programs, and use a regular HDD for the rest of your programs and storage.
