I'm running an i7-4790k on a Maximus VII Hero board and evga GTX 780 card. When I run games like Skyrim and Saints Row 4 the GPU is pegged at 98% utilization and between 85% and 98% memory utilization. It seems to stabilize at about 78C after a couple of hours of playing, then the game will crash at around 3 to 4 hours of playing. I haven't seen the temperature go above 79c, and if I try and go right back into the game it will be unstable. If I wait a while, they will run fine. Games that don't hit the GPU as hard seem to be able to run indefinitely.

From what I've read, 79c is nothing to worry about with that card, so I don't think it's overheating. Could the issue be with the power supply? (Admittedly, it's a pretty cheap 1000w single rail supply).

It`s possible. All you need is to verify if you can run your system in a more expensive PSU till then we can have a definite answer, or if anybody in the community have tried already. What is the rating of your PSU anyway?

Actually a 1000W for your system is over. You don`t OC right? So high 80%~100% GPU CPU utilization is forcing your parts to run at it`s peak which means this game is very intense. Anyway I think you don`t have problem there, just take note of your temps not to exceed in its limit.

About the crash, if you OC which I suspect you do, this might cause the crash.

The only OC I've got is what the ASUS software set up, I'll kill that and try it again and see what happens.

Shutting down the Asus smartweak seems to have fixed the issue, thanks!
