Is my good old 680. Seriously.

Playing wow in eyefinity / surround and the 680 has better FPS, doesn't jerk or tear and actually works. The 295x2 is almost unplayable. Tried so many settings on crossfire, vertical sync etc. Just changing forms causes the screen to stutter. Terrible was of £700... gutted :(

r9 295x2 is even better than gtx 780 ti in speed and performance but in your case may be the card is faulty.

WoW is an OpenGL game. Crossfire frame pacing does not work on OpenGL or DirectX 9 games (Skyrim). That means that 295x2 is delivering the performance of a single GPU only, but also adding in stuttering from unevenly paced frames.

Well that makes a bit more sense than some of the stuff I've read, do you know of guides that may mitigate this problem?

It is a hardware/driver problem. You need to be using the latest drivers and make sure that the checkbox for frame pacing is enabled in the Catalyst Control Center.

Frankly, this has been a well-known issue with AMD cards in general, and people tend to pass it by when giving advice and doing their research. OpenGL, DirectX 9, and Linux are not very well supported by AMD in general, and even worse for a Crossfire setup. Apparently, there have been some improvements with the 295x2 for DirectX 9 games, but still nowhere near being entirely resolved.
