is this crucial 8gb ddr3 kit ( http://uk.crucial.com/gbr/en/ble2cp4g3d1608de1tx0ceu )compatible with my mobo ASRock N68C-S UCC also if on the Crucial site is said that this kit is incompatible? The ram modules are 1600Mhz non-ecc unbuffered and the ASRock N68C-S UCC supports up to 8gb of system memory, 1600 ddr3 non-ecc unbuffered. Why this kit could be incompatible?

I haven't checked, but if you say that these sticks aren't compatible with that motherboard according to crucial ... then yes can it be a risk.

I would guess that being newer sticks, they are using the higher density memory ICs which are the current staple for ICs and not compatible with the older chipset mobos

probably, however I wrote an email to tech support of Crucial but maybe I will buy a Corsair Vegeance Kit with cl 9, I read it works with my mobo.
