VM Host Box (Dev Box, Home Server, NAS) Build advice

Planning to build a mini-itx home server that will host a variety of VMs.

What I need:
* As many threads as possible (hyper threading is a must)
* Dual Gigabit LAN
* As much RAM as possible (32GB would be nice).
* Highspeed storage to avoid bottle necks with multiple vms.

What I'd like:
* 801.11ac Wifi
* Quiet as possible
* Ability to add powerful graphics card later for steambox or CUDA.

So all that considered I have come up with the above, I would like to cut the price down a bit to ~$1100. Looking to build sometime in the next 3 - 6 months.

Should I consider the Xeon e3 line as a cheaper alternative?
Are there any itx mother boards supported 32GBs of ram?
Also has anyone had experience running Linux (Ubuntu server) with the above hardware?
Any other thoughts or advice?
