if i sli gtx 780 will i be able to use my psu which is 850 watt and would i be able to max out 1440p ?

A GTX780 will run 1440P reasonably well.
I suggest you buy the monitor first and see how you do.
If you need more graphics capability for your games, then add the second GTX780. The new price will not change, but you should be able to pick up a used one reasonably.
