My system is as follows:

i7-3770K @ 3.5 GHZ (not OC'd)
16 GB of DDR-3 RAM (4 dimms)
2 SATA HDs
1 flash SSD
1 opitcal drive (BD-writer)
1 Sound Blaster X-Fi Fatality Ti (pci-e)
4 case fans (one Noctua, the rest stock from a Lan-Li HTPC case)
USB Devices Typically Connected: Wireless keyboard/mouse combo, Xbox 360 dongle, logitech webcam, Netgear wifi receiver.

I currently have a Rosewill HIVE 750w PSU. I will be upgrading from a GTX 680 4GB over to GTX 970s in SLI in a couple of days and I plan to overclock them.

Will my PSU hold up so long as I stick with only 2 GTX 970s?

Yes that PSU will be just fine. 970's are very energy conserving.

You should have no problems with that at all, you coupd probably run a 3 way SLI of gtx 970's without a problem

Two way SLI 970's will run you about 500W. I never thought I would be able to say SLI and 500 in the same sentence but yeah.. about 500W.

Is that 500w just for the GPU's though? So only 250w remaining for everything else? I know it's not quite that simple, but just making sure I understand.

No 500W for the entire system.

500w was the minimum for 1 card, the TDP was 145w for each card, so he would need at least 660 with sli.
