now that the 700 series has come and gone, I want to know what the heck was going through nvidias head with the pricing of the titan and titan z

They're going to start selling them as paperweights, with the extremely affordable 970 and the 980 out i dont know who will want to get a titan.

Im pretty certain it was mostly an engineering exercise, kinda like homologation specials from the car world. The titans were never really in large supply. it was like telling the world "This is what we could do if cost is no object".

like the homologation specials from the 80's- their performance is not good compared to modern hardware, but in their time, they were the best.

The Titan and Titan Z still have their place, but its not with gaming. With the normal GTX cards the double FP compute is only ~1/24 the single precision performance, on the Titans it is only 1/3 so a Titan Black has 8x the double precision performance of a 780 Ti, this isn't useful for gaming but is incredibly useful for applications that make use of GPU computing.

The 970 and 980 are even worse than the titans, they have 1/32 the double precision performance compared to their single precision performance. A titan black is 12x faster than a 980 for a double precision workload so i'd say the titans were priced nicely given their purpose and performance, they could have been priced like the Tesla cards.
