Need help with GPU for first pc build!

I'm new to this and thought some of you guys could help me. I'm currently planning to build my first gaming rig, iv spent weeks reading up information to make sure I do it right. I have a list of what I'm going for but I can't seem to choose a GPU as there's so many, the main thing im trying to achieve is a good running eyefinty set up with 3 monitors, my main game I want to get into is Skyrim. Iv seen the Radeon HD7970 or Powercolor R9 280X could do job?? If not what single GPU card could run Skyrim on med/high settings (not bothered about ultra just yet) with decent fps OR what double crossfired GPUs could do the job (if better) but around same price?
So far my rig will have..

CPU-
AMD FX 8350

CPU Cooler-
Cooler Master Hyper 212 Evo

Motherboard-
ASRock 970 pro3 R2

Graphics Card-

Hard Drive-
Seagate Barracuda 1TB 7200rpm

Memory-
??? (Depending on GPU)

Power Supply-
??? (Depending on GPU)

Optical Drive-
Samsung OEM SATA CD/DVD Writer

Operating System-
Windows 7 64bit OEM

I have a budget limit of around £200 for GPU, Thanks.

The GTX 970 is £250, I would say save up for that because it is a absolute beast, But the R9 280X will do Skyrim at max easily.
For the Psu i would recommend the Evga Supernova G2 750w/850w, It is a great psu and has a 10 year warranty.

Yeah the GTX 970 if you can run to it! Performance bargain.

Triple monitors require more than the normal amount of graphics power. Here is a link showing what a very strong GTX970 can do:

A GTX970 will need a 500w psu.
A R9-280X will need 600w. It may not do the job for you as well.
Also skyrim needs lots of vram; the GTX970 has 4gb.

I have a 7970, which is just like a 280x. It will max out Skyrim at 1080p... the problem I find is that once you start using mods and ENB, your FPS will drop and stutter.

I'd go for a 970 as well.

3gb is vram is fine for skyrim, 4gb is obviously better, but for skyrim you dont need gb or even 3gb, *cough* 770 2gb *cough*
