If I'm using multiple ap's should i use different ssid's?

For simplicity sake, keep the SSID the same and forward any DNS/DHCP requests to the main AP/router.

That is a very tough call. The advantage of the same SSID is simple configuration but you have no control over which AP devices connect to. They will pick based on what happens to be the strongest signal at the instant the session is opened but they tend to be very stubborn about changing and sometimes you do not get optimum load balancing of devices. Using different SSID allows you full control but now you put the burden of selection of AP on the end user. It is pretty much is the user smart enough to make a better choice than the automated software and are they willing to do this function in return for better performance or would they rather be lazy and live with non optimum connections.

If you devices reliably pick the nearest AP then using the same SSID is acceptable. If they don't, you can try LOWERING the transmit power of the APs and router so they don't overlap as much and there is a bigger difference in signal strength to help steer your devices OR you can use different SSIDs and manually choose your connection point. Different SSIDs do make it easier to troubleshoot network problems. Name the SSIDs with an indication as to WHERE they are located so that when they show up on a selection list you can intelligently choose the nearest one.

If you ever need to troubleshoot connectivity issues with your AP it will be a bit of a nightmare if all your SSDs are the same.
I would keep all the passwords the same but just switch up the name.
