Shall I get 1 8gb ram stick or 2 4gb ram sticks?

2-4s unless you have a 20year old computer.

1 stick and you won't get dual channel, on most boards.

There are boards that I think can do it. flex something.
I would get 2 sticks anyway.

Of course the difference is only about 10% maybe a little more.
So it isn't a huge loss if you use 1 stick.
