Home premium limits your ram to 16GB, so if you intend to get more ram You'd want either Professional or Ultimate.

As for what you get with the different OS's, I find Professional is the best, Home Premium has far less control panel options from what I have seen, which the professional has some pretty good features. It's pretty much in the middle of Ultimate and home premium, and the more satisfying option for many.

I recommend you to install Windows 7 Home Premium as it provides good and stable performance on older pc's. Windows 7 basic wont allow to access or modify things like Dekstop theme. No aero peek preview and lots more creepy things. Windows 7 ultimate are recommend if your pc have a 4gb of ram and a gpu. :)
