Current setup from Fall 2011:

i5-2500k, overclocked to 4.3ghz
ASRock Extreme 4 Z68 mobo
2x GTX 570(1.25gb VRAM) in SLI
8GB (2x 4GB @ 1600mhz) Corsair Vengeance RAM
25" ASUS 1080p 16:9 display
Enermax MODU 87+ 900w PSU

I play Battlefield, FarCry 3, Bioshock Infinite.

I will most likely never go multi-display, but am considering 1440p or possibly 4k down the line.

I'm considering purchasing a single 970 GTX (MSI 970GTX 4g) now, and then upgrading the CPU/Mobo and then adding a 2nd and even possibly a 3rd 970 at some point (still unsure about 3-way sli, but by the time I add it, they should be available for cheap on ebay)

I'm not sure how much my current CPU/Mobo will bottleneck the 970, but don't think it will be a huge issue at 1080p.

Any input, suggestions? I'd like to push off the CPU/ MOBO cost as far as possible until I'm ready to up my gaming resolution.

Solution
You would want to either:
1, Get a new CPU+mobo altogether
2, Get a 970

I would recommend combining the two options as you have lots of parts you can reuse. this would be the upgrade I'd suggest right now:
PCPartPicker part list / Price breakdown by merchant

CPU: Intel Core i5-4690K 3.5GHz Quad-Core Processor ($234.96 @ NCIX US)
CPU Cooler: Cooler Master Hyper 212 EVO 82.9 CFM Sleeve Bearing CPU Cooler ($32.99 @ Mwave)
Motherboard: Asus Z97-A ATX LGA1150 Motherboard ($137.99 @ NCIX US)
Video Card: EVGA GeForce GTX 970 4GB ACX 2.0 Video Card ($329.99 @ Amazon)
Total: $735.93
Prices include shipping, taxes, and discounts when available...
