I plan on building a computer in the near future and am waiting for Windows 9. I was wondering if I can download Chrome OS to use for now until I can get Windows 9. Would my documents and data still be saved?

Thanks in advance

If you're asking the question at this level, no you can't.

Chromium OS (a Linux variant), and Windows 9 (not released yet, maybe a Preview this week) are completely different.

1. Do not consider using Windows 9 as a primary OS until well into next year. It is not done yet.
2. Chrome OS (Linux) and Windows are different. Sure, you can save txt docs and jpg images. Beyond that...you really need to know what you're doing.

Although possible, it is not really a straightforward process. Really though it is no different than installing any other Linux distrobution then moving to Windows.
These should point you in the right direction:
http://www.chromium.org/chromium-os
http://en.wikipedia.org/wiki/Chromium_OS
http://chromeos.hexxeh.net (installable builds of Chromium-os for regular PC's)
As long as your save your documents to a different dive [like a removable flash drive] then all your documents/pictures/music will be transferable to your Windows PC. If you were to keep all your documents on the HDD, then install Windows over chromium-os you would find your HDD had been wiped clean, chromium-os and all documents included.
