I am wondering if this build will be suitable for 2560x1400 gaming. Let me know what I could maybe improve on. I am going for a red and white color scheme. Just with the case and fans mostly. Any changes I should make?

The GTX 970 is almost as fast as the 780 Ti for $350. Two of them should get you pretty nice framerates at 1440p.

A 4790K is a Haswell refresh CPU, which might not work on a Z87 board.

2133MHz RAM is not necessary.

The 840 PRO is only a few dollars more than the EVO.

I would say get the 970 ACX SC for ~200-300$ while losing about 5% performance.
Get a Z97 motherboard, you'll thank me later after you upgrade to Broadwell:) (you WILL, right?)
The RAM's overpriced at NO performance boost.
120GB SSDs in RAID 0? Not a good idea, if you want speed but not capacity
All Corsair PSUs whose name begins with a C use cheap caps
