Stuttery gaming issue

I had a few parts lying around so I decided to throw together a new build.

Athlon X2 370k
Gigabyte R9 270X
CX750m
Asrock a88x Exreme6+
8gb 1600mhz RAM
1TB HDD

I know the CPU is holding the rest of the system back (I will be upgrading it shortly) but during gaming on this rig I have noticed a strange jerkiness when playing games (Titanfall). I find it a bit odd because the system is pushing around 50fps on max settings in titanfall yet the game still is jerky. I threw in a Athlon X4 750k and the problem went away (and the fps shot up substantially). It seems obvious that the crappy 370k is to blame but I don't understand why the frame rates are decent but the gameplay is noticeably jerky. Any ideas?

Try this analogy: a car can have an average speed of 50 miles per hour but this is not a smooth ride as the car rapidly fluctuates between 55 and 45 miles per hour. ie: the cpu is often struggling.
