My setup idles at 40-42 C and peaks at 65-68 C with full load.

I had thought that water coolers were better. This doesn't seem like it's much different from stock air cooler numbers.

Should I be concerned?

PS: This is my first water cooler experience and the rig was built by a shop tech.

If room temps are >30C, then those temps are just fine. Try OCing just using the multiplier and not touching the Vcore as long as you can, I assume you know the basics. The load temps matter most, and they're ok.
The temps are good, you shouldn't worry unless it goes up from 72C on full loads. Well, surely water coolers are good, but not necessarily better than air coolers. Quality air coolers take on liquid ones head on many a times, like Noctua D14/15 or Phanteks. You however should not be concerned, the temps are totally fine. Have you tried OCing yet?

Haven't tried OC yet. I thought I'd find out if its safe to do it first.
I thought that shifting to water coolers would give me the headroom to do it.
Seeing that the numbers weren't much different than from stock coolers i was a little peeved.
 
Your idle temps seem high but you also have to look at room temps as well. Air and water coolers will not go below room temps no mater how hard you try.

All your temps seem to be about 10*c higher then normal, but once again since we dont know what the room temps are its hard to say.

my old computer had a custom single water loop, cpu and 2 580's

Room temp 21*c
water in res 26*c
cpu idle 30*c full load 56*c
