AMD Radeon HD 8790M or NVIDIA GeForce GT 540M? Which is better?

The 8790M is quicker, that site puts it on par with the GTX 660M, automatically making it far superior to the GT 540M

The AMD Radeon HD 8790M is a better choice.

Would the AMD Radeon HD 8790M be compatible with my HP Envy 23? It says on the HP website that you can change the graphics card but I don't know if it is compatible.

Ah you're using an all-in-one :S, that does look like the mobile GPU could be replaced though I'm not entirely certain about upgrading mobile GPUs.

They usually should have a cooler attached so you might need to unscrew that and clean off the thermal paste, then apply fresh paste after upgrading.
Some may also have thermal pads which you'd want to pay attention to like in this video (it's a laptop but I'd imagine the form factor to be less cramped for your AIO).
