High end as in high end. Okay guys go nuts with this.
Right, so I need a gaming PC that can be called the best of 2014/2015. NO BUDGET LIMIT (Yay!)
Don't need multiple monitors just one(not 4K but 1080p) will do, need 4 way SLI with GTX980's? maybe 4.6GHz core i7 4960x, 2 4TB Seagate 7200rpm hard drives, 64GB ram, maybe a good sound card W/ water cooling for the system and a simple case will do.
I'm not kidding guys, I've worked hard and now I am in a position to afford this PC so please tell me the best configuration to go with.

For a 1080p screen, just make a PC around an i5 and a GTX 970, maybe a Gsync monitor. There won't be any discernible difference from an X99 SLI setup.
With the money saved buy stuff that bring greater benefit like a new games, phone/tablet/console. Maybe even stuff like furniture and appliances.
There are many things you can get to improve your quality of life. The world isn't confined within your PC case.

It sounds like a Core i7 is overkill but will the Core i5 cut it (As in Assassin's creed unity/ GTA V and so on)? The gpu obviously can. Quick question, What is a g sync monitor?
I was actually going to buy a tablet, Could you help me? Samsung Galaxy note 10.1 2014 edition or the new iPad? Mostly for work purposes (Presentations and videos)

An i5 will cut it. Just get an unlocked one like the i5-4670K so you can overclock when you need/want to. The major difference from an i7 is Hyperthreading which most games don't use anyway.
Nvidia Gsync is a technology that eliminates screen tearing (looks like the image is split into multiple pieces during rapid screen movement) without losing framerate from using vsync. Some monitors include this technology but they are expensive and usually have a 144Hz refresh rate.

For your tablet just get an iPad for simplicity.
