I have been looking at all of the cards coming out and everything is telling me that the 980's are currently the best cards. However (I don't have any real budget restraints here), I am unsure as to whether I should wait for GM200 to come out to upgrade or to just foot it at 980. My quandary comes in when the 780ti's all get price dropped to where the 780's are. What, in everybody's best opinion, is the thing to do here?

Depends on how long you want to wait. GM200 probably won't drop until AMD releases their 390X, which is expected in early 2015, around January.

Any upgrade to Maxwell is going to benefit you regardless if it's 970s or 980s. The main questions is what type of gaming do you do at what resolution? At 1080P in SLI both models will suit you just fine and provide better performance over 670s. Maxwell offers better power efficiency as well as the new technologies. If you have any questions let me know :)

No reason to go SLI at 1080p. For 1440p, sure, but at 1080p one 970 or 980 is powerful enough for today's games. Even at 1440p a 970 can max most games.

I guess it would definitely help you help me to know my system specs. (I'm posting detailed specs and then copy pasting them elsewhere for quick reference later. Sorry for long list)

CPU: Intel i7 5930k (stock clock for now)
Mobo: Asus X99 ROG Rampage V Extreme
Memory: 16 GB Corsair Vengeance LPX 2666
PSU: Corsair AX1200i
Case: Corsair 900D
Boot drive: Samsung 840 EVO 500GB
Monitor: ASUS PB278 at 1440p
Fans: So many fans. Water cooling will happen when budget allows.

Two 970's would work well at 1440p and so would two 980's. If you want to wait until next year, then waiting is fine. You can get the most powerful single GPU then, or you can get two 970's or 980's and go SLI now. Either option is a good one.

I will get 2 or 3 of the new 970's from MSI and then sell 2 of them to my friend and put the remaining one in my Wife's computer when the next set of cards come out. Thank you Frag06 and EVGA_Joey.
