I am not building a Pc but I am just wondering what kind of graphics cards the Intel Pentium G3258 3.2GHz would bottleneck.

Graphics cards like the Asus GeForce GTX 780 3GB DirectCU II Video Card
or the Sapphire Radeon R9 290 4GB Tri-X Video Card and lower.

Defiantly, I'd only put a radeon r9 270 or GTX 660 in with a Pentium G.

There is no definitive answer for that - it all depends on individual games. Some games may bottleneck on the Pentium with far less than a GTX780 and some won't even with a GTX980. You have to check benchmarks for the specific games you are interested in.
