Nothing - Stay with the GTX 970 - although i'd switch it to an aftermarket cooler MSI gaming and Gigabyte Windforce would be my choices.

)I'm not sure what the price difference on the two are where you are from... But in the US the GTX 970 is ~$330 while the GTX 980 is $550+. Maybe link the GTX 980 you planned on going with?

The palit you chose is a great choice , if that's in your budget buy it , I have the 970 MSI gaming and I love it.Alright, great I'll go with that. Thanks for the support
Don't get a reference card if you can get an aftermarket for about the same price... Look into the MSI gaming, Gigabyte windforce, EVGA ACX, ASUS DCUII first.

I don't really know the need for the i7, you could go for the i5 (still Devil Canyon) and use the saving to add on for your other parts. As for the 970, its a real bang for your buck but get a non-reference card like the one from MSi or the Palit Jetstream or Gigabyte's

What parts could I upgrade if I cut down to a 4690k?

it shows that your i7 cost 251.99, the cheapest i5 4690K Devil Canyon I could find is at 167.26
251.99-167.26 = 84.73 saving
You could use that 84.73 to buy something like say a nicer case, the OS, etc,
Looking at your parts, you are all good,
The
GPU Palit GTX 970 = Great Choice
That H80 i = An Okay choice but you can choose a nicer alternative that is also cheaper
i7 = as I mentioned you can save up to 84 quid from it if you choose the i5 and just OC it
the EVGA Supernova = Great Choice it is made OEM by Super Flower* really top notch PSU one of the best in the market and really nice pricing too
The Gigabyte Mobo = Good Choice
But there are some things you still need too buy unless you have them already i.e.:
Hard Drive maybe a 1TB atleast for storage/OS
SSD maybe for boot drive atleast 120GB or a fully boot drive only SSD a 60GB+ (optional although I recommend atleast for OS its fully optional)
PC Case Midi/Mid ATX or Full Tower case
and the OS, unless you going ubuntu

What water cooler do you recommend?
I am not really sure for you. If your okay with the H80i you'll be fine, Im not a big fan of closed loop cooler see.
Although one of the best bang for your buck Tower heatsink cooler right now is the Hyper 212 Evo from Cooler Master (not a liquid cooler but it does the job). You can easily OC up till 4.4 GHz. But since you are using an "overclocker" oriented CPU you definitely might need something bigger of a tower heat sink.
But ye, if your okay with the H80i try get the cheapest you can acquire brand new. Other alternative is not a Closed loop liquid cooler but full tower air cooler which can perform or even beat closed loop cooler performances.
So far I have used:
Hyper 212 Evo (sold it as I went 4.6GHz) you can get max 4.4 over clock, after that you going to have some heat issues
EVGA ACX Cpu Cooler (reached and performs well at 4.4 Oc but gave it to my brother)
Tested a used Corsair H80 performed well but at 4.4's temps too much heat and fan is loud
Cryorig R1 Ultimate (on my shelf , it is Humongous!) and it performs really well
XSPC EX240 Water cooling Kit currently using right now performs significantly better.
#1 If you are not overclocking further than 4.4 I think you are okay with a hyper 212 Evo its only £25.35 right now.
^I wouldnt recommend that though, I mean you got an overclocker oriented card so you have to overclock it as high as you can possible can but its just my opinion, or just get a non overclocker like the 4670 non K version or something like that.
#2 If you are planning to go over 4.4 you need something that can cool more efficiently like a dual tower humongous heat sink for air cooling its an alternative for CLC's
#3 or a high end 120mm rad Closed looper like that H80i or go for dual rads like the H100i.
right now your H80i is priced at £75.95, whilst the cheapest H100i I can find goes for 79.99.
^£4.04 or so difference from the H80i and H100i and H100i is 240mm rad = 2 x 120mm (its like 2 H80i)
Personally though, if an h80i is only 5 quid cheaper than an H100i, I would literally go for the H100i, because it has double the radiator size for only 5 quid (you are getting more).
If its worth doing, its worth overdoing!!!
But yeah, if your okay with the H80i Price, I would not mind adding 5 more quid and get the 240mm 100i, it'd be more worth it for the price point instead of going for the 120mm H80i.
Although be warned, and make sure your case can fit the 240mm rad above the case . They are usually installed above like this one: http://img.hexus.net/v2/cooling/Corsair/H100i/H100i-12b...
You should be able to find some information about the case and find out if it supports 240mm rads, because my case sadly didn't support it and had to re route the open loop water cooler with the rad outside the case but you can't do that for closed loop water coolers.
But its just me, I know how hard it is to pick the items, I have been there when I first started my build last December
