I have six monitors now, and was considering building a 6 monitor computer, but it appears that there are no AMD graphics cards that will suit the performance requirements, and no Nvidia that can support the screens. I was wondering if it would be possible to use a higher end Nvidia card for rendering and gaming, but use a AMD card to to display stuff. (like no monitors connected to the geforce card

No. You can't do as proposed. Sorry.

Why not just go with matched GPUs in either CF or SLI to meet all of your needs?

I've never heard of this being attempted before, to link an AMD card to do the work and a nVidia card output the image. I do not think that this is possible.
A direct connection through SLI or Crossfire will not work in any case.

There used to be some custom drivers available that would allow you to use a AMD/ATI GPU as the primary video device and to allow an Nvidia GPU to be used as a Physx device. Those drivers are no longer available.

You could only go with Crossfire or SLI

Crossfire means when you take two or more AMD cards and run them side by side, It isn't just one card you HAVE to buy two - four cards to crossfire same with SLI

That would be the best course of action (and would keep any system complexity to a minimum). Make sure your displays support DisplyPort for best results.
