PSU only has one Molex Slot, My graphics card needs 2.

Im thinking of getting an adpter that converts it to 2, will that work?

I dont think so, YOu can always find an adapter for an auxiliary power slot.

each Molex connector can only provide a specific amperage. Splitting it into two means that you are potentially doubling the load on that connector. Are you sure your PSU can provide that amount of power on that connector?

One of the design factors of what connectors a PSU has is how much power it can draw. If I recall, a Molex can provide about 60 Watt of power, while a 6-pin PCIe connector requires 75W and the 8-pin 150W.
