overclocking i7920 co 1st time overclocking

Overclocking i7 920 so wont bottleneck gtx 980 quite so bad

Looking to actually buy gtx980 or 970 along with later upgrading my processor main board ram at slightly later date at the moment leaning towards i7 4970k, as i realise im going to get some bottleneck on cpu intensive games with my current set up so hence im back to try
i believe i have sufficent cooling in noctua dh 14 and also have new full tower case haf x
also ive dwnloaded temp programmes and stress testing apps
I've been looking at a few guides obviously i have questions as good as the guides are
im not looking to get to 4ghz just 3.4 would be great 3.6 would be great
i also realise this isnt a 5 minute job this is my fiest time overclocking please be paient

ive also noticed i have more then 2 options other than manual and auto
XMP, DOCP ?
what exctly are these and should i use them ? settings for them are included in pics below
the guide starts by trying to find stable Vcore for stock speeds do i need to do this can i not just miss this step and input manual settings ? im guessing its tring to get lowest amount to start from then the idea is to work incrementally work up the vcore why is bad to have high vcore is this what casues the potentially instability ?its just looking at others settings the vcore is usually above where you start at 1.25 and at around 1.36 could i have some clafrication on this ?
any other relavant info apperciated im sure will have follow up questions after actually tring this out

CPU - I7920 C0/C1, fitted with Noctua DH14
MAIN-BOARD - ASUS 6PTSE,
RAM - CORSAIR 6GB MODULE SIZE 2048 PC3-10700H (667 MHz) CM3X2G1600C8,
GRAPHICS CARD - GEFORCE GTX 580,
HD'S 3.5 320GB,3.5 1TB, 240 CRUCIAL SSD M500,
PSU - OCZZS650W, CASE ANTEC 300 soon to be moved into Coolmaster HAF X

all stock settings also includes xmp and docp settings if i choose them

From what Ive read on here and on other forums it probably will to some extent on more cpu dependent games but im not to bothered as i will replace in few weeks time just wanted to learn a little from ovrclocking on 920.
What type of ram would i need with z97 main board ? could i use my old ram ? if i do decide to get the cpu mainboard ram 1st will consider if i could get i74970k main board and ram for around the same price as a gtx980 which is about £440 in the UK
