Unable to install windows 7

Hi

I built a computer and installed windows 8.1 which I quickly learned was a mistake (I never knew how much I loved the start menu).

Now i am trying to install windows 7 over it. I attempted install with windows 7 ultimate 64 bit, but the computer does not recognize it as a bootable device (it was same USB i used to install windows 8 earlier). Basically the windows 7 copy I am using it from an ISO extracted to a USB disk.

So far, I've gathered the problem is with the extracted copy of windows 7 not the ISO. I confirmed this by creating a virtual machine, the VM is able to boot from and install the ISO directly mounted to it, but when I map the USB port and try to boot up from USB disk with windows 7 on it, it will not boot off the USB.

At first first I thought it was something to do with the UEFI BIOS on the motherboard (asus p9x79, running latest version of bios). I tried disabling fast boot and secure boot and tried various combination without any succesful attempts at booting up from flash drive.

So I eventually gave up on the USB disk and went digging around for an old windows 7 home premium CD from a few years back. Hoooray!!! it boots up from the CD, it gets to windows 7 installation process but during the install process, it does not recognize the hard drives :(

So after banging my head against the wall for two weeks with this one, I figured I throw in the towel and go to people smarter than me for help. So, here I am!!

Here is my configuration on the computer:
OS: Windows 8.1 pro (need to replace with windows 7)

Hardware:
Motherboard: Asus p9x79
CPU: Intel I7-4930k
Memory: Corsair vengeance ddr3, 1600 mhz 2x8GB
Drives: Samsung evo (2 drives running raid 0 config) and 2x seagate 3 TB (no raid on seagates)
