I basically want to install a 250GB SSD as a boot drive in my existing system. Its been running for a few years on two 1TB HDDs in RAID 0. Can this be done without completely reinstalling everything? How would I go about doing all this?

Clone your boot/OS partition from your old drives to the SSD.

You may have more data on your raid array than can fit on the new 240gb ssd.
Samsung clone utility(for their ssd's only) has an option to clone selectively.
You could move windows and your programs, leaving only data files.
