is 970 really necessary?

Okay so I am building my first rig. I have an intel Core i5-4590 3.3GHz Quad-Core Processor (BX80646I54590) + GIGABYTE 1150 Intel Z97 ATX Motherboard (GA-Z97X-SLI LGA). I have been planning on getting the 970 but now I am re thinking it. It's backordered and was thinking what other alternatives there are to the 970. I don't plan on using multiple monitors but I do want to play on ultra settings for future games.

Well, if you look at it compared to the 770 it is about $30 more, 25-30% stronger, and uses quite less power. If you ask me, it is a fantastic GPU on the market that is released for a great price for being new. I would definitely get it if I could, and especially over any AMD GPUs which are hotter, more power-hungry, and less powerful.

Okay so 970. What is a great case to use for the 970 to allow for great airflow and space? Also which 970 would you suggest?

Depends on your plans, I like the Cosair 300r, 450D, and phanteks enthoo pro.
As for the card, look into the MSI or ASUS models.

Ultra settings for gaming. Don't plan on Overclocking ( don't know too much about it but would like the option for future) Z97 ATX MOBO and I5-4590 3.3ghz processor.

One of those 3 is a great option. Corsair makes great cases across the board, and the enthoo pro stands out being very roomy and easy to work with.
