Building a PC... But unsure what to look for, help? =<

Okay. So I am over here in Japan Learning from my cousin. I'm to order some parts of my choosing and assemble a Rig. He says I can be as luxurious as I want. So I decided to go all out and be as eleborate as I can.
My budget is around 700-800 dollars (Just for the Rig itself) I don't mind breaking that. But I wish to set an estimate minimum as I will be buying a part per pay check.

What I intend to work with is:

CPU:

Hard Drive:
I will game... But! Nothing super fancy like Battle Feild on ULTRA, will be playing games similar to Vindictus, Archeage and another Korean MMO that may come out such as Black Desert. Maybe if I use two Hard Drives? (Oh right, and of course help!)

Cooling System:
I'd like to use the a liquid cooling system, if not I will be using fans. (I don't intend to do any overclocking, but I don't mind the extra layer (Or better) of protection. Oh almost forgot help!)

Monitor(s):
Will be a Single Asus Monitor for now going to buy more for multi-monitor setup.

Keyboard and Mouse:
Will eventually be aquired but recommendations would be much appreciated (I do already have some non gaming hardware)

Finally the Workstation:
I need a nice sized desk for a laptop and 2 or 3 Monitor display Set up. Desks can get kind of of expensive. Also the apartment is kind of small. I'd prefer something with a slot for my Tower so that it isn't on the floor.

my pc is under $800 and has a 970 which is a little more expensive then the 290 but it does give better performance (slightly) and is really power efficent as well. If you did opt for the 290 though you could fit an SSD in it which would make the system much more responsive and faster.

If your budget really does have room to grow, I'd consider this option. But perhaps with a different CPU. I just included my favorite AMD processor as per your preference. I'd go with the R9-290 over the GTX 970 as I've personally crossfired 290's 2-3 times before and seen very impressive results. Cheaper solution than the 970 as well.

That's what kind of makes it less so. Intel processors generally have stronger single core processors and make use of hyperthreading to create threads. Ergo, they're typically better for gaming purposes as most games only use 2-4 Cores

Although it blows the budget up some more I'd take my i5 4960K vs any AMD CPU/APU any day.

With that being said though, there's nothing wrong with the Processor I listed in the 8320! Eight cores allows it to be viable for various things other than gaming, and it's still an overclock machine for gaming as well.

Hm... So I should go with an Intel build instead? And opt out on the 8-core because 4 of which I will never use? Which would be the better long term investment? I mean... If I don't have problems running the game I play on ULTRA is there really anything to worry about? =o I don't mind if the cores are weaker, core for core, would this still be a viable build? Also I'm not so hardcore a PC gamer. Anything a bit cheaper in the Graphics card department but nothing that will cause bottle necking? I mean I may end up running only some HDMI which is better for multiple monitors? I like to keep things fairly simplistic. .-. 1000 dollars a huge jump for growth. 800 is a lot more comfortable. I don't need 4k display and 1080p is fine. So I do need multiple ports for multiple screen set up?

Thank you for all your assistance! And recommendations! I like these Intels despite being an AMD fan girl. I don't know if I will be using the PC for other bits, but I may venture into those fields because I would no longer be prevented by hardware or lack of thereof. Thanks for being so patient with me also.
