Here is a list somebody made for me but I feel like getting rid of the SSD and investing in a better GPU or will this 270x be fine ?

Depends on your wants and your resolution you gaming at.
R9 270X is ok for current 1080p with high to ultra settings.
If you don't mind losing the faster boot up times and snappier OS then you could spend it on getting a R9 280 or R9 280X.
You could ditch the cpu cooler since the stock cooler is sufficient enough.
